Emmentaler is traditional swiss with large holes. It is made authentically in a copper kettle. Bruce Workman, master cheesemaker, is the only person to make this cheese in 180 wheel in a copper kettle in the U.S. It is rated Number One in the World by Cook’s Illustrated Magazine!
